You can edit the Cheque Layout. There are various date format supported.
You can click menu "Management > Cheque Layout List" and select the bank cheque and edit it.

You can change the currency label in Layout. You can adjust it there.
For example, change "Dollar" to "Pound", "Cent" to "Penny".
